Deconstructed Apple Pie Ala Mode

The family wanted to have dessert tonight. This is what we came up with... a Deconstructed Apple Pie! No one can wait 2 hours for a traditional Apple pie...



What you need:

4 Granny Smith apples - cubed
1/4 cup brown sugar
1/4 cup white sugar
2 tbsp butter
1 tsp cinnamon
1 tbsp flour
1/2 small lemon
Pinch of salt


Put all ingredients in a medium sized pan. Cook in medium heat until apples are soft. Stir constantly.





Serve with a cone.




Top with ice cream

Shrimp Scampi

The Ted's Bakery Haupia pie also reminded me of the shrimp scampi. When we visited Hawaii those were some of the places that we wanted to go back to again. This summer vacation we did make it to the shrimp scampi truck! Yum!

This is the authentic Giovani's Shrimp Scampi.




Last night I decided to make my own shrimp scampi.

What you need:

Fresh shrimps with heads on. Devein the shrimp. Leave the shell. It's more authentic if you have the shell on.  I used the scissors to cut the through the shell and devein it from there.

You may ask why I keep the head. The shrimp head has a ton of flavor when you cook it. Why throw it out if it will enhance the flavor of your food.

1/2 lb shrimps



4 cloves fresh garlic, minced.






 2 tbsp Butter

Salt & Pepper, to taste


 The Process:

Heat the pan in medium heat.

Add butter and garlic on the pan.

Cook the garlic. Stir constantly so it does not burn. You do not want burnt garlic! The kitchen should smell like garlic by now. Yum!

 Add the shrimp to the pan.

 Cook the shrimp for 8-10 mins or until the shrimp is not gray anymore. Season with salt and pepper.


 When fully cooked, separate the shrimp head and discard. The shrimp head was just added for flavor.

Place in shrimp on a plate. Serve with rice, if you prefer.

Fast Food

If you live close to Costco, then there's always a "Fast Food". They sell a ton of ready to eat food. Once in a while I'll get their rotisserie chicken. This Costco trip, I did get one. My picky kids were not really a big fan of the chicken so I dressed it up a bit to make it appetizing to them.

I took out the chicken meat. (You can use any rotisserie chicken).
Added the BBQ sauce.



Cooked the chicken in low heat.



Served it! Kids approved!



They liked it a lot that they made a sign.




That was fast food!

Ice cream cone

Tonight, the family decided that they wanted to have ice cream for dessert. That was an easy choice of dessert. Since we did not have any ice cream cone at hand, I offered to make ice cream cone. Besides, what's an ice cream with out a cone.

What you need:

Make sure you have a waffle cone maker. Preheat the waffle maker.




1 cup cake flour



2/3 cup sugar



2 eggs



1/4 tsp salt



2 tbsp vegetable oil



1 tsp vanilla



In a medium bowl, add eggs and salt.






Using a fork, mix 2 ingredients together.



Add sugar to the egg mixture.



Still using the fork, mix sugar and egg mixture.




Mix until combined.



Add the vegetable oil. Mix again.



Add the cake flour.



Mix thoroughly. Make sure there are no lumps in the batter.



Add vanilla.



Mix thoroughly again.



Just the right consistency.



Using the ice cream scoop, pour batter on to the waffle maker. Light indicator will tell that the waffle cone is ready.




Remove the waffle when light indicator turns green.



Using the cone mold, roll out the hot waffle cone to shape like a cone. Waffle cone is more pliable when hot.




This is how it looks like.



Place the cone on the cone rack to cool off.




You may also shape the waffle cones into bowls. Tip over a small bowl and place the hot waffle on the bowl. Shape the waffle to resemble like a bowl.



This is how it looks like. Let the bowl cool off.



I also made waffle cookies using my smallest ice cream scooper.






Cones are now ready!
