Day 4 (April 6) - Good morning!

This is our 4th day in Costa Rica. We had breakfast at the B&B that we are staying at.

Graciella fixed our breakfast. It was nice to have breakfast ready as soon as we woke up.

Day 3 (April 5) - Monteverde

Hello everyone!

Yesterday the family drove from our hotel to Monteverde.








Although it was only 72 miles, it took at least 2.5 hours to get here. Not to mention the number of stops that we have to do to make sure that we were not lost. There are no street numbers or street names here! It just says, "300 meters east of name of another store/major street". Besides, the speed limit is half as fast as in Ca. Also, the last few miles (approx 10-15 miles) going up to the mountain was unpaved road - going uphill, downhill and it was a curvy road as well. We were tossed around in the car! Because if that experience, I was thinking of making a shirt that says "We Survived the Road to Monteverde!"

After a few hours of driving, we finally made it to Monteverde! Tonight we are staying at a Hostel/B&B so we can do the Sky Walk tomorrow.







John and Kitty were very excited to see the bunk beds that they want to sleep on it! Hmmm, I don't think so! Kitty moves around the bed
When she sleeps and sometimes falls out of bed - so no. Not this time. They played on the bed for a while.



















This restaurant was recommended by one of the guest here at the B&B. So this is where we had dinner. It was yummy!


















The rest of the evening was spent in the local shops.

As I write this blog, I can hear how windy it is outside. It sounded like ocean waves.

On our way!

We are finally on our way to Costa Rica. We are ready to go. 5 1/2 hour flight. Hope kids have a good night sleep.

Little Chef

Kitty making her own strawberry syrup for her pancake.



















Her Recipe:

6-8 fresh strawberries sliced
1 tbsp sugar
2 tbsp water

Mix together in medium fire. Stir until boiling. Continue to cook for 3-5 mins.

Serve. Share. enjoy!

Cinnamon Rolls

Another all time favorite baked good in our household is cinnamon rolls. This is a lot of fun to make as well. Kids have to be patient because this process is long.

What you need:

Your going to need your yeast mixture to start with. I be making at least 2 recipes for the cinnamon roll to make it worth the wait.



Using my favorite mixing bowl,
I put 1/2 cup warm water and added 1 tbsp yeast.



Add 1 tbsp sugar



Mix all 3 ingredients until combined.



Set the mixture aside until the mixture is frothy and bubbly (about 5 mins).



Meanwhile, lightly grease the bowl/container with butter. This prevents the dough from sticking.



For the dough you need:

1/2 cup milk
1/2 cup butter (melted)



Melt the butter



1 tsp salt



2 eggs



1/4 cup sugar



3 1/2 cups all purpose flour (more for dusting)




Instructions:

Pour the yeast mixture in a bowl.






Add sugar, salt






Flour


Eggs


Melted butter and milk


Using a dough hook, mix all the ingredients.


Continue to mix until the incorporated.



Add more flour to the mixture until dough is not sticking on the bowl.


Continue to knead. Dough has to be soft.


Remove the dough from the bowl. Add flour to prevent the dough from sticking. This is how it should look like.



Place the bowl in a greased container/bowl. Set aside and let it rise. It should double in size.





Dough is now ready.




Prepare the cinnamon sugar mixture.

1 cup sugar
2 tbsp cinnamon




Dust the counter with flour.



Put the dough on the counter.



Roll out the dough.



Coat one side of the dough with 1/2 cup butter (softened).



Pour the cinnamon sugar mixture onto the dough. Spread the mixture.



Roll out the dough.



Using a dough cutter cut the rolled dough.



Place each roll on a greased baking pan.



Set aside and let it rise for another 40 mins.






Preheat the oven to 350 degrees. Bake for 25-30 mins.








The the buns out of the oven. Let it cool.



Topping:

1 1/2 cup confectioners sugar
3 tbsp milk
1/4 cup butter (melted)
1/2 tsp vanilla

Combine all ingredients. Mix all ingredients using a wire whisk. Drizzle the mixture on the warm buns.
